Cheese Crisps

Ingredients

  • 1.5 cups AP flour
  • 8 T butter (room temperature)
  • 1 t garlic salt
  • 1/4 t cayenne pepper
  • 1/2 t paprika
  • 1/4 t ground mustard powder
  • 2 cups sharp cheddar cheese
  • Rolling Mix (pepitas, dried onion, sesame seeds, dried parsley, ...)
  • Directions

    1. Add all ingredients (except cheese and Rolling Mix) in a mixing bowl.
    2. Mix until ingredients are evenly incorporated.
    3. Add cheese.
    4. Mix until dough comes together in a ball.
    5. Divide dough in half.
    6. Roll into 2 logs, approximately 8 inches long.
    7. Place in refrigerator for 2 hours.
    8. Preheat over to 400 degrees.
    9. Cover two sheet pans with parchment paper.
    10. Remove logs from refrigerator.
    11. Cut into 1/4 inch slices and place on parchment paper (they don't spread too much so can be pretty close together).
    12. Bake for 8-10 minutes (or until edges just start to brown).
    13. Remove from oven and let cool on pan.

    Notes

  • Makes about 45 crisps.
  • Can store in air-tight container for up to 7 days.
