Cheese Crisps
Ingredients
1.5 cups AP flour
8 T butter (room temperature)
1 t garlic salt
1/4 t cayenne pepper
1/2 t paprika
1/4 t ground mustard powder
2 cups sharp cheddar cheese
Rolling Mix (pepitas, dried onion, sesame seeds, dried parsley, ...)
Directions

Add all ingredients (except cheese and Rolling Mix) in a mixing bowl.

Mix until ingredients are evenly incorporated.

Add cheese.

Mix until dough comes together in a ball.

Divide dough in half.

Roll into 2 logs, approximately 8 inches long.

Place in refrigerator for 2 hours.

Preheat over to 400 degrees.

Cover two sheet pans with parchment paper.

Remove logs from refrigerator.

Cut into 1/4 inch slices and place on parchment paper (they don't spread too much so can be pretty close together).

Bake for 8-10 minutes (or until edges just start to brown).

Remove from oven and let cool on pan.
Notes
Makes about 45 crisps.
Can store in air-tight container for up to 7 days.
